CRANBERRIES YAY!

Cranberry Cooking

This is the season! And who doesn’t love them?! Did you know they are considered one of the ‘world’s healthiest foods’? Cranberries provide us with an incredible array of phytonutrients, such as phenolic acids, proanthocyanidins, anthocyanins, flavonoids and triterpenoids. They also are a very good source of vitamin C, dietary fiber, and manganese, as well as a good source of vitamin E, vitamin K, copper, and pantothenic acid.

The list of health benefits is long: protection against Urinary Tract Infection (UTI), anti-inflammatory benefits, immune support, cardiovascular benefits, antioxidant protection, anti-cancer benefits and digestive tract benefits. Keep in mind it’s the WHOLE cranberry that supports our health best.

When speaking in general terms about the health benefits of cranberries be aware the most commonly consumed form of this food is juice processed from the berries and typically produced by adding loads of sugar. This form of cranberry will NOT provide you with cranberry’s full phytonutrient benefits. The cranberry “presscake” (what is left behind in terms of skins and flesh after the juice has been processed out) contains the bulk of the phytonutrients.

With that said, yesterday the mailman showed up with a big box of them, courtesy of Lake Nokomis Cranberries (Eagle River, WI), and I obviously HAD to put them to use right away!

I made a delicious Cranberry Orange Spice Chutney (Paleo, Clean Eating, Gluten Free, Processed Sugar Free, Vegan), and baked a Cranberry Orange Cashew Bread (Paleo, Clean Eating, Gluten Free, Processed Sugar Free, Dairy Free). Needless to say they are both spectacular!
