5 Minutes Coconut Flour Chocolate Mug Cake

When I talk about my love for chocolate, people smile and say “Who doesn’t love chocolate?!”. Exactly! I’ve been on my journey of clean eating for about 7 months now, so my ‘chocolate’ fix comes from raw cacao and cocoa powder goods. Cutting processed sugar made such an incredible impact on my well-being, I have no intention going back! Still, who said healthy eating has to be boring and tasteless? I treat myself with healthy & tasty dessert ALL the time. And you can trust my word on it! This quick mug cake is the perfect fix for an unexpected dinner guest or (if you are anything like me) a night in: pjs, couch, blanket and Netflix. Oh boy!

Nicole’s 5 MINUTES COCONUT FLOUR CHOCOLATE MUG CAKE

Gluten free – Grain Free – Dairy Free –  Processed Sugar Free – Clean Eating – Vegetarian Recipe

(1 serving)

Ingredients:

1 Tbsp Organic Coconut Flour

1 Egg

2 Tbsp Unsweetened Organic Cocoa Powder

2 Tbsp Almond Milk (or Coconut Milk canned/full fat, for a fluffier texture)

½ Tbsp Organic Virgin Coconut Oil (melted)

½ Tsp Baking Powder (gluten free)

1 Tbsp Organic Raw Honey OR Organic Unrefined Coconut Sugar

1 Tsp Vanilla Extract (optional)

Start with beating the egg in your mug, add the flour, the rest of the ingredients and fold everything together. You will obtain a smooth dough, almost with a creamy consistency. Stick the mug in the microwave for approximately 1 minute and 20 seconds (depending on your microwave), and your healthy, decadent chocolate cake is ready! You can serve it with a scoop of ice cream or coconut whipped cream, and fresh berries.
