If you have been following my blog a bit, you probably know how much I love chocolate ❤ AND peanut butter I could not live without ❤ I literally have it every day. Seriously! Oh well, to each its own weakness! This Halloween I decided to prepare some healthy treats for the lucky ones that will come knocking at our door tonight. Trick or treat 😉
Nicole’s HEALTHY PEANUT BUTTER CUPS
Gluten free – Dairy Free – Processed Sugar Free – Clean Eating – Organic – Vegan Recipe
(6 large or 12 mini cups)
Ingredients for the Peanut Butter filling:
1 cup Organic Peanut Butter
1 Tbsp Organic Virgin Coconut Oil (melted)
1 Tsp Organic Raw Agave Nectar
Ingredients for the Chocolate Topping:
1/3 cup Organic Unsweetened Cocoa Powder OR Cacao
2 Tbsp Organic Virgin Coconut Oil
1 Tbsp Organic Raw Agave Nectar
1 Tsp Pure Vanilla Extract
Cracked Himalayan Salt (optional)
In a small bowl combine all the ingredients for the peanut butter filling and set aside.
In a small pan, on low heat, combine the ingredients for the chocolate topping and stir for 2-3 minutes until all is mixed together.
Line a muffin pan with muffin cups and cover the bottom with a very thin layer of the chocolate topping. Place in the freezer for 4-5 minutes. Retrieve the pan and pour the peanut butter filling in the muffin cups dividing it equally. Place it back in the freezer for about 30 minutes this time. Third and last step, pour the chocolate topping to finish your cups and return to freezer for at least an hour (I recommend two) before serving. Sprinkle with cracked Himalayan salt if desired.
With these ingredients you will be able to obtain either 12 mini or 6 large cups. I used a large muffin pan, so I went for 6 large.
Note: Store your cups in an airtight container and refrigerate until ready to serve, as they tend to melt quickly!
