I always make a point in saying this is a BIG staple food in my nutrition: it’s healthy, tastes great, and it’s packed with nutrients and fibers. I haven’t found one person yet I recommended it that didn’t fall in love with it instantly! Easy to grab when you are on the go so you won’t skip breakfast, it would leave you satisfied and provide you with energy for most of the morning. You can also enjoy it as a mid-day snack with a cup of your favorite tea/coffee, to keep you going and avoid energy slumps. Great item to make part of your daily routine 🙂
Nicole’s BANANA WALNUT OAT BREAD
Gluten Free – Dairy Free – Processed Sugar Free – High Fiber – Clean Eating – Vegetarian Recipe
(7-8 slices)
Ingredients:
3 cups Organic Oats (Gluten Free)
3 ripe Bananas
3 Eggs
1/3 cup Organic Virgin Coconut Oil (melted)
1 Tsp Vanilla Extract
1 Tsp Baking Soda
1/2 Tsp Baking Powder (gluten free)
Pinch of Salt
1 ½ Tbsp Cinnamon
1 Tsp Ground Nutmeg
¼ cup Walnuts
Preheat oven to 350F. Line a bread loaf pan with parchment paper and lightly spray with coconut oil. In a large bowl mash the bananas with a fork, add the eggs and beat together. Combine the rest of the ingredients while keep mixing. Pour into pan and bake for 25 minutes. When ready, remove from oven and let cool down before serving.
I slice my bread into 7-8 thick slices, singularly wrap and stick them in the freezer. In the morning I would get one out, let it sit for a few minutes while I get ready, and throw it in the toaster. The bread stays nice and moist, like out of the oven fresh! It is delicious by itself, or you can enjoy it with a spoonful of organic peanut butter (like I do!) 😉
Note: make sure your bananas are ripe, as the sweetness of the bread depends on it.
