Today I was thinking about posting the recipe of my ‘bomb’ Tacos, but instead decided to share this variation to the usual “Taco Tuesday”: Chicken Avocado & Jalapeño Burgers. Literally one of the best burgers I’ve had in my life! Quick and easy to prepare, super tasty and fresh with cilantro and a squeeze of lime. The whole serving size (3 of them), barely packs 400 calories of awesome proteins and good fat. Can’t get enough of them! ❤ ❤ ❤
Nicole’s CHICKEN AVOCADO & JALAPENO BURGERS
Gluten Free – Grain Free – Dairy Free – Clean Eating – Paleo – Whole 30 – Low Carbs – Low Calories – High Protein Recipe
(1 serving = 3 burgers)
Ingredients:
1 skinless-boneless Organic Free Range Chicken Breast or Thigh (or 4oz freshly Ground Chicken)
1/3 cup Almond Flour or Almond Meal
½ ripe Avocado
1 de-seeded Jalapeno Pepper
1 Green Onion
Salt & Pepper (to taste)
Small bunch of Fresh Cilantro
1 Lime
Organic Virgin Coconut Oil Spray (if using a grilling pan)
In a food processor ground the chicken and place it into a bowl. Add the flour, salt & pepper, chopped onion, jalapeno and avocado. Fold everything together. Divide in three equal parts and pat burgers into shape. I recommend using a grilling pan as it retains the moist of the chicken. Lightly spray it with coconut oil, and make sure it’s nice and hot before placing the patties on it. Grill the burgers for about 4-5 minutes each side (make sure they are cooked thoroughly!). Serve on a bed of salad topped with chopped cilantro and the juice of a squeezed lime.
You can also put them in a bun and enjoy them with your favorite toppings, as they are an incredible tasty-healthy option to traditional burgers.
