One week till Thanksgiving! I had been planning on sharing few different recipes for your Holiday menu, but had two very hectic weeks and little time to blog! I will try to catch up and post some healthy & easy ones during the next few days. Mostly little twitches to your traditional dishes, to keep it classic, tasty, AND healthy 🙂
First on the list: Cranberry Orange Chutney. Let’s not give into the canned cranberry sauce! Not only it is loaded with sugar, but also preservatives. It’s so easy to make your own with a handful of ingredients and only takes few minutes.
Mmm! The aroma that spreads around the house when I prepare this chutney! You can serve it on top of your roasted turkey/chicken/pork, as well as put it in your sandwich as a spread. I personally love it in my tuna salad: mix it together with a little salt & pepper, olive oil, apple cider vinegar and you have the perfect filling for your cucumber ‘boats’ 😉
Nicole’s FRESH CRANBERRY ORANGE CHUTNEY
Gluten Free – Dairy Free – Processed Sugar Free – Low Fat – Clean Eating – Paleo – Vegan Recipe
Ingredients:
4 cups Fresh Cranberries
the Juice of 2 Oranges
the Zest of 2 Oranges
½ cup Organic Raw Agave Nectar OR Organic Unrefined Coconut Sugar (or Organic Raw Honey, although it won’t be vegan anymore)
½ Tbsp Cinnamon
½ Tsp Nutmeg
Combine all the ingredients in a saucepan and simmer over medium heat for about 15 minutes. Berries will start popping and sauce will gradually thicken. Stir occasionally. When ready, let cool and transfer to an airtight jar container. Refrigerate until ready to serve.
