Nicole’s ROASTED ORGANIC HEIRLOOM CARROTS with HONEY-ORANGE GLAZE
Gluten Free – Grain Free – Dairy Free – Low Fat – High Fiber – Paleo – Clean Eating – Vegan Recipe
(4 side servings)
2 lbs Organic Heirloom Carrots
3 Organic Garlic cloves
2 Tbsp Extra Virgin Olive Oil
2 Tbsp Organic Raw Honey (OR Raw Unrefined Agave Nectar for a Vegan option)
¼ cup Fresh Squeezed Orange Juice (one orange should do it)
the Zest of an Orange
Salt & Pepper
Preheat oven to 400F. Wash the carrots and trim the tops. Now, you can either peel them or not: I don’t as I like to get that extra intake of fiber, and the peel is very thin anyways. Your call! Toss them in the olive oil and arrange them on a parchment paper lined baking sheet along with the garlic cloves halved. Season with salt and pepper and roast for 30 minutes, flipping the carrots over after 15.
In a small bowl combine the honey, orange juice and zest. When carrots are ready, remove from oven and brush the honey-orange mixture on top making sure they are fully coated. Remove the garlic (as it will end up burning) and return to oven for 5-7 minutes. Adjust salt & pepper to taste and serve warm. You can sprinkle with fresh or dried thyme if desired.
