Another quick & healthy recipe to get you back on track after the Thanksgiving ‘shenanigans’. This salad is refreshing and a great combination of flavors: crunchy and light. If you need an additional intake of protein, you can add a hard-boiled egg, a can of tuna, or a grilled chicken breast.
Nicole’s LIGHT POMEGRANATE SALAD
Gluten Free – Grain Free – Dairy Free – Low Fat – Low Carb – Paleo – Clean Eating – Vegan Recipe
(1 serving)
Ingredients:
1 fresh bunch of Arugula Salad
½ ripe Avocado
½ Cucumber
5-6 Cherry Tomatoes
1 ripe Pomegranate
1 Tbsp Raw Whole Flaxseeds
1 Tbsp Extra Virgin Olive Oil
1 Tbsp Organic Unfiltered Apple Cider Vinegar
Salt & Pepper
Whenever there is a pomegranate to de-seed I always start with that, as it is the most time consuming task 😉 You can check my favorite (and easiest!) way of doing it from my Nicole’s NO BAKE CHOCOLATE GANACHE POMEGRANATE TART recipe.
Move on to assemble your salad placing the arugula on your plate and topping it off with all the chopped veggies. Combine the olive oil and ACV in a small cup and pour on top of it. Adjust salt & pepper to taste. Finish with the flaxseeds and pomegranate.
