Gluten Free Cauliflower Gnocchi Pomodoro & Basilico

I am a big fan of using cauliflower as a healthy, low carb & low fat option. It is extremely versatile and everything I end up making tastes so good! From pizza crust (will be posting my recipe soon!), to Nicole’s GLUTEN FREE GARLIC CAULIFLOWER MASH , to these Gnocchi.

Nicole’s GLUTEN FREE CAULIFLOWER GNOCCHI

Gluten free – Clean Eating – Vegetarian – Low Carb – Low Fat

(2 servings)

Ingredients:

1 small/medium Cauliflower Head riced

2 Tbsp Brown Rice Flour (Gluten Free)

2 Eggs

½ cup Goat Cheese

½ cup Parmesan Cheese

1 Tsp dried Italian Herbs (Rosemary, Thyme, Oregano)

Salt & Pepper

Cherry Tomatoes

Fresh Basil leaves

1 Garlic clove

2 Tbsp Parmesan Cheese (optional to top it off)

2 Tbsp Extra Virgin Olive Oil

OR Pesto Sauce

Wash and pat the cauliflower dry. Cut the florets and ‘rice’ it in your food processor (make sure you cut the stems off, only use the florets). Place the cauliflower rice in a bowl, cover it, and microwave for 7-8 minutes (do not add any water, and make sure the bowl is microwave safe). Let it cool down until you are able to handle it without burning yourself, and dump it into a kitchen towel. Twist it and try to squeeze out as much water as you can. This is a VERY important step, do not skip it!

Preheat oven to 425F. Line a rimmed baking sheet with parchment paper and lightly grease (I recommend spraying it with coconut oil). Put your cauliflower in a bowl and mix with the eggs, goat cheese, Parmesan, dried herbs, salt, pepper, and ultimately add the flour. Once combined, with a small spoon scoop dumplings out the dough and pat into shape on the prepared pan. Bake for about 15 minutes, or until golden. When ready, remove from pan and toss with your favorite sauce.

Gluten Free Cauliflower Gnocchi with Pesto Sauce

I love Mediterranean flavors so my favorite picks are either cherry tomatoes, fresh basil, garlic drizzled with extra virgin olive oil, and topped with Parmesan cheese (lightly saute’ the garlic in the olive oil, add tomatoes halved and gnocchi: toss in the pan for a couple of minutes and finish with Parmesan cheese and fresh basil); or fresh homemade Pesto sauce.
