Nicole’s FRESH CRANBERRY ORANGE CHUTNEY

Cranberry Orange Chutney

One week till Thanksgiving! I had been planning on sharing few different recipes for your Holiday menu, but had two very hectic weeks and little time to blog! I will try to catch up and post some healthy & easy ones during the next few days. Mostly little twitches to your traditional dishes, to keep it classic, tasty, AND healthy 🙂

First on the list: Cranberry Orange Chutney. Let’s not give into the canned cranberry sauce! Not only it is loaded with sugar, but also preservatives. It’s so easy to make your own with a handful of ingredients and only takes few minutes. Continue reading “Nicole’s FRESH CRANBERRY ORANGE CHUTNEY”

Nicole’s ASPARAGUS & EGGS with SRIRACHA SAUCE

Asparagus & Eggs with Sriracha Sauce

Another quick an easy everyday recipe for you today 🙂

Asparagus are high in folate (folic acid), fibers, potassium, thiamin, vitamins B6, A and C, with no fat and no cholesterol. If you never had them with eggs you have been missing out! Seriously! Besides being a perfectly balanced nutritious meal, this dish is a great combination of flavors. I used to put a bit of Tabasco on my scrambled eggs back in the day, until I tried Sriracha. Oh boy! It’s delicious! Continue reading “Nicole’s ASPARAGUS & EGGS with SRIRACHA SAUCE”

Nicole’s CHICKEN AVOCADO & JALAPENO BURGERS

Chicken Avocado & Jalapeno Burgers

Today I was thinking about posting the recipe of my ‘bomb’ Tacos, but instead decided to share this variation to the usual “Taco Tuesday”: Chicken Avocado & Jalapeño Burgers. Literally one of the best burgers I’ve had in my life! Quick and easy to prepare, super tasty and fresh with cilantro and a squeeze of lime. The whole serving size (3 of them), barely packs 400 calories of awesome proteins and good fat. Can’t get enough of them! ❤ ❤ ❤ Continue reading “Nicole’s CHICKEN AVOCADO & JALAPENO BURGERS”

Banana Walnut Oat Bread

I always make a point in saying this is a BIG staple food in my nutrition: it’s healthy, tastes great, and it’s packed with nutrients and fibers. Easy to grab when you are on the go so you won’t skip breakfast, it would leave you satisfied and provide you with energy for most of the morning. You can also enjoy it as a mid-day snack with a cup of your favorite tea/coffee, to keep you going and avoid energy slumps. Nicole’s MINESTRONE STYLE FARRO SOUP

Minestrone with Farro

Today we finally got some fall weather our way. Don’t get me wrong, I love the SoCal ‘endless summer’ weather we are blessed with mostly year round. But I guess it makes these cooler, drizzling days more of a treat. So the first thing that came to my mind this morning was some hot, comforting Minestrone soup. It was always a winter staple as a kid growing up in Italy. I still remember my grandma behind the stove (and yes, if you are thinking about the stereotypical Italian grandma right now, you are spot on!), the smell filling up the kitchen on those rainy days. To this day, Minestrone is still probably my favorite soup of all: earthy, wholesome, light and fulfilling. Continue reading “Nicole’s MINESTRONE STYLE FARRO SOUP”
