I am a firm believer there is no diet that will do what eating healthy does. Whether you are looking to lose (or gain) weight, adjust to a medical condition (diabetes, high cholesterol, allergies, intolerances, sensitivities, etc…), or just improve your overall wellbeing. A lot of us underestimate the impact Nutrition has on both our bodies and minds. Although to some this might seem unrelated, when you eat real, whole, healthy food you nourish your body, not just feed it. Continue reading “YOUR MOTIVATIONAL PEP TALK OF THE WEEK…”
Yet another squash recipe! I do love them very much… This stuffed acorn squash is a combination of the season’s “Holiday flavors” with an Italian twist. I love finishing dishes with raw extra virgin olive oil and fresh Parmesan cheese ❤
This recipe is fairly easy to execute, super-tasty, looks beautiful when you plate it, and last but not least, has great nutritional values. Continue reading “Nicole’s QUINOA, SAUSAGE & APPLE STUFFED ACORN SQUASH”
Right after posting the recipe for my ORGANIC ROASTED BEET PESTO I decided I HAD to share a good example on how to put it to use 😉
What better than a fancy, decadent Grilled Cheese sandwich? This is another example of how eating healthy is anything but boring! Enjoy it! Continue reading “Nicole’s BEET PESTO GOAT CHEESE & ARUGULA GRILLED CHEESE”
Beets are another one of my favorite super-foods. They are a unique source of phytonutrients called betalains. Betanin and vulgaxanthin are the two best-studied betalains from beets, and both have been shown to provide antioxidant, anti-inflammatory, and detoxification support, on top of promoting optimal health. I eat beets in all kind of ways: love them in my morning smoothie! But this pesto is something else. So versatile it can be enjoyed with raw veggies, rice crackers, on a cheese plate, in a salad, or as a spread. Either way it is delicious! Continue reading “Nicole’s ORGANIC ROASTED BEET PESTO”
This no bake chocolate-pomegranate tart is seriously too good to be true. Although my original recipe calls for a raw, gluten & grain free crust, I decided to post the ‘quicker and easier’ version of it. It is still incredibly delicious and not as laborious, so it’s a win-win! I’m giving you a good reason to pick some of those yummy inviting pomegranates up next time you are at the store 😉 Continue reading “Nicole’s NO BAKE CHOCOLATE GANACHE POMEGRANATE TART”
When I talk about my love for chocolate, people smile and say “Who doesn’t love chocolate?!”. Exactly! I’ve been on my journey of clean eating for about 7 months now, so my ‘chocolate’ fix comes from raw cacao and cocoa powder goods. Cutting processed sugar made such an incredible impact on my well-being, I have no intention going back! Still, who said healthy eating has to be boring and tasteless? I treat myself with healthy & tasty dessert ALL the time. And you can trust my word on it! This quick mug cake is the perfect fix for an unexpected dinner guest or (if you are anything like me) a night in: pjs, couch, blanket and Netflix. Oh boy! This RISOTTO has been one of my favorite meals lately: great nutritional value, amazing source of fibers, minerals and vitamins (iron, zinc, calcium, phosphorous, Vitamin E, B1, B2, folate acid).
Black Rice, or ‘Forbidden Rice’, is an ancient grain that has been eaten in regions of Asia for thousands of years: for centuries it was reserved for only Chinese Royalty. This type of rice is the richest in powerful disease-fighting antioxidants, it has anti-inflammatory properties, and last but not least, is believed to have the ability to stop the development of diabetes, cancer, heart disease and weight gain. Not to mention, it is a naturally gluten free grain. Continue reading “Nicole’s SWEET POTATOES BLACK RISOTTO”
These amazing gluten free healthy muffins will make you fall in love! The combination of the fresh cranberry tart flavor with the coconut sugar and flour natural sweetness will literally steal your heart ❤ Enjoy them with a cup of your favorite tea, for breakfast, afternoon teatime, or even as dessert served warm with a scoop of ice cream. As promised, here’s the gnocchi recipe mentioned in my previous post. Enjoy it!! 🙂
I love winter squash. All of them. And when this season comes around I’m in ‘squash-heaven’! Oh the possibilities! They are delicious in every way you prepare them: roasted as a side dish, mashed, in a risotto, as ravioli’s filling, fritters, cake, fresh pasta…and the list goes on. Squash are very low in saturated fat, cholesterol and sodium, a good source of Vitamin E, thiamin, niacin, Vitamin B6, folate, calcium and magnesium, and a very good source of Vitamin A, Vitamin C, potassium and manganese. Some of the health benefits include antioxidant support, anti-inflammatory and blood sugar regulation benefits, promotion of optimal health. So, when something is so yummy and so healthy, how can you not take advantage of it?!
