So after the success of the Nicole’s ORGANIC GLUTEN FREE PUMPKIN PIE recipe I posted yesterday (over 200 hits!), I decided to give you a couple of more dishes that involve pumpkin. After all, if we don’t take advantage of it now, when then?!
Risotto is one of my favorite ways to prepare rice: must be my Italian roots! Continue reading “Nicole’s PUMPKIN SPICE ORGANIC RISOTTO”
Ohh Pumpkin Pie…a classic of the season! Thanksgiving is approaching fast (WAY too fast!), and a lot of us are starting putting together the ‘Holiday’ menu. This recipe will give a different twist to your Pumpkin Pie. To start with, it doesn’t pack all the sugar you would normally find in a regular pie. It is dairy and gluten free, and the combination of coconut & almond flour gives a nutty finish that is perfect with the natural pumpkin flavor.
Considering you will probably be stuffing yourself with everything else, you can at least feel good about topping it off with a healthy treat 😉 Continue reading “Nicole’s ORGANIC GLUTEN FREE PUMPKIN PIE”
I love this quick salad! It’s a great option to stick to a healthy meal when you are on the go, or just don’t feel like cooking. It literally takes few minutes to put together and not only it tastes great, but it’s packed with vitamins and fibers too. Did you know there is now direct evidence between garbanzo beans and appetite? A recent study showed participants that included garbanzo beans in their diet reported more satisfaction, consumed fewer processed food snacks, and overall ate less, beating unwanted cravings. I am a big fan. Continue reading “Nicole’s QUICK & DELICIOUS GARBANZO BEAN SALAD”
I always make a point in saying this is a BIG staple food in my nutrition: it’s healthy, tastes great, and it’s packed with nutrients and fibers. I haven’t found one person yet I recommended it that didn’t fall in love with it instantly! Easy to grab when you are on the go so you won’t skip breakfast, it would leave you satisfied and provide you with energy for most of the morning. You can also enjoy it as a mid-day snack with a cup of your favorite tea/coffee, to keep you going and avoid energy slumps. Great item to make part of your daily routine 🙂 Continue reading “Nicole’s BANANA WALNUT OAT BREAD”
I was recently reading an article that stated it takes 21 days of commitment to make (or break) a habit. Depending on how you look at it, that can seem a very achievable timeframe or an eternity. The way each one of us approaches change is different. We all look for a ‘change’ for better, but a lot of times when time comes we get really scared, start questioning ourselves and find excuses to procrastinate. Continue reading “MAKE THE CHANGE. BE THE CHANGE.”
Today we finally got some fall weather our way. Don’t get me wrong, I love the SoCal ‘endless summer’ weather we are blessed with mostly year round. But I guess it makes these cooler, drizzling days more of a treat. So the first thing that came to my mind this morning was some hot, comforting Minestrone soup. It was always a winter staple as a kid growing up in Italy. I still remember my grandma behind the stove (and yes, if you are thinking about the stereotypical Italian grandma right now, you are spot on!), the smell filling up the kitchen on those rainy days. To this day, Minestrone is still probably my favorite soup of all: earthy, wholesome, light and fulfilling. Continue reading “Nicole’s MINESTRONE STYLE FARRO SOUP”
If you have been following my blog a bit, you probably know how much I love chocolate ❤ AND peanut butter I could not live without ❤ I literally have it every day. Seriously! Oh well, to each its own weakness! This Halloween I decided to prepare some healthy treats for the lucky ones that will come knocking at our door tonight. Trick or treat 😉 Continue reading “Nicole’s HEALTHY PEANUT BUTTER CUPS”
I am a firm believer there is no diet that will do what eating healthy does. Whether you are looking to lose (or gain) weight, adjust to a medical condition (diabetes, high cholesterol, allergies, intolerances, sensitivities, etc…), or just improve your overall wellbeing. A lot of us underestimate the impact Nutrition has on both our bodies and minds. Although to some this might seem unrelated, when you eat real, whole, healthy food you nourish your body, not just feed it. Continue reading “YOUR MOTIVATIONAL PEP TALK OF THE WEEK…”
