Asparagus & Eggs with Sriracha Sauce

Another quick an easy everyday recipe for you today 🙂

Asparagus are high in folate (folic acid), fibers, potassium, thiamin, vitamins B6, A and C, with no fat and no cholesterol. If you never had them with eggs you have been missing out! Seriously! Besides being a perfectly balanced nutritious meal, this dish is a great combination of flavors. I used to put a bit of Tabasco on my scrambled eggs back in the day, until I tried Sriracha. Oh boy! I love this quick salad! It’s a great option to stick to a healthy meal when you are on the go, or just don’t feel like cooking. It literally takes few minutes to put together and not only it tastes great, but it’s packed with vitamins and fibers too. Did you know there is now direct evidence between garbanzo beans and appetite? A recent study showed participants that included garbanzo beans in their diet reported more satisfaction, consumed fewer processed food snacks, and overall ate less, beating unwanted cravings. I always make a point in saying this is a BIG staple food in my nutrition: it’s healthy, tastes great, and it’s packed with nutrients and fibers. I haven’t found one person yet I recommended it that didn’t fall in love with it instantly! Easy to grab when you are on the go so you won’t skip breakfast, it would leave you satisfied and provide you with energy for most of the morning. You can also enjoy it as a mid-day snack with a cup of your favorite tea/coffee, to keep you going and avoid energy slumps. Today we finally got some fall weather our way. Don’t get me wrong, I love the SoCal ‘endless summer’ weather we are blessed with mostly year round. But I guess it makes these cooler, drizzling days more of a treat. So the first thing that came to my mind this morning was some hot, comforting Minestrone soup. It was always a winter staple as a kid growing up in Italy. I still remember my grandma behind the stove (and yes, if you are thinking about the stereotypical Italian grandma right now, you are spot on!), the smell filling up the kitchen on those rainy days. Organic Roasted Beet Pesto

Beets are another one of my favorite super-foods. They are a unique source of phytonutrients called betalains. Betanin and vulgaxanthin are the two best-studied betalains from beets, and both have been shown to provide antioxidant, anti-inflammatory, and detoxification support, on top of promoting optimal health. I eat beets in all kind of ways: love them in my morning smoothie! But this pesto is something else. Nicole’s SWEET POTATOES BLACK RISOTTO

Sweet Potatoes Black Risotto

This RISOTTO has been one of my favorite meals lately: great nutritional value, amazing source of fibers, minerals and vitamins (iron, zinc, calcium, phosphorous, Vitamin E, B1, B2, folate acid).

Black Rice, or ‘Forbidden Rice’, is an ancient grain that has been eaten in regions of Asia for thousands of years: for centuries it was reserved for only Chinese Royalty. This type of rice is the richest in powerful disease-fighting antioxidants, it has anti-inflammatory properties, and last but not least, is believed to have the ability to stop the development of diabetes, cancer, heart disease and weight gain.
