This is an incredible dessert, worth of a patisserie! Perfect to be enjoyed with a cup of tea, mid-afternoon. The nature of coconut flour allows the cake to stay moist. Most of the sweetness comes from the fruit you decide to use. My best friend’ grandma has this amazing grape-vine in her backyard, and I LOVE to take advantage of those sweet, delicious fruit! I really like the crunchiness of the seeds once they are cooked, but if you don’t particularly enjoy that you can substitute grapes with your berries of choice.
It also freezes extremely well: to enjoy it just place it in the microwave for a minute and it’ll taste like fresh out the oven! (TIP: before storing it make sure you slice and individually wrap in plastic).

The clock is ticking: a couple of days until Thanksgiving, and you are trying to get ready to select and prepare the perfect meal for your family and guests. Left over squash?! Hehe, I do get around plenty of it lately 😉 Put together a quick & delicious side dish, perfect to pair with your turkey, chicken or pork chop. Ohh Pumpkin Pie…a classic of the season! Thanksgiving is approaching fast (WAY too fast!), and a lot of us are starting putting together the ‘Holiday’ menu. This recipe will give a different twist to your Pumpkin Pie. To start with, it doesn’t pack all the sugar you would normally find in a regular pie. It is dairy and gluten free, and the combination of coconut & almond flour gives a nutty finish that is perfect with the natural pumpkin flavor.
