Nicole’s NO BAKE CHOCOLATE GANACHE POMEGRANATE TART

Chocolate Ganache & Pomegranate Tart

This no bake chocolate-pomegranate tart is seriously too good to be true. It is still incredibly delicious and not as laborious, so it’s a win-win! I’m giving you a good reason to pick some of those yummy inviting pomegranates up next time you are at the store 😉 Continue reading “Nicole’s NO BAKE CHOCOLATE GANACHE POMEGRANATE TART”

Nicole’s SWEET POTATOES BLACK RISOTTO

Sweet Potatoes Black Risotto

This RISOTTO has been one of my favorite meals lately: great nutritional value, amazing source of fibers, minerals and vitamins (iron, zinc, calcium, phosphorous, Vitamin E, B1, B2, folate acid).

Black Rice, or ‘Forbidden Rice’, is an ancient grain that has been eaten in regions of Asia for thousands of years: for centuries it was reserved for only Chinese Royalty. This type of rice is the richest in powerful disease-fighting antioxidants, it has anti-inflammatory properties, and last but not least, is believed to have the ability to stop the development of diabetes, cancer, heart disease and weight gain. Not to mention, it is a naturally gluten free grain. Continue reading “Nicole’s SWEET POTATOES BLACK RISOTTO”

Cranberry Cooking

This is the season! And who doesn’t love them?! Did you know they are considered one of the ‘world’s healthiest foods’? Cranberries provide us with an incredible array of phytonutrients, such as phenolic acids, proanthocyanidins, anthocyanins, flavonoids and triterpenoids. They also are a very good source of vitamin C, dietary fiber, and manganese, as well as a good source of vitamin E, vitamin K, copper, and pantothenic acid. Continue reading “CRANBERRIES YAY!”
