Valentine’s Day ❤ is only few days away, and if you are anything like me you are probably hoping nobody will show up with a box of “absurdly processed-full of chemicals-unhealthy” chocolate 😉
Don’t get me wrong, I LOOOVE sweets, but the ‘real’ thing, which is hardly what comes in a heart shaped box. Well, I’m giving you this incredible recipe, so you can scratch that hitch for a sweet treat without the guilty feeling.
Bananas, walnuts, chocolate chips and oats. Yes, 4 ingredients only! You’ll love them! Your other half will love them…. And your kids too 😉
Rich in fiber, gluten free, processed sugar free, low fat…and very nutritious. Enjoy!! ❤ Continue reading “Nicole’s BANANA-CHOCOLATE CHIP-OAT COOKIES”

The clock is ticking: a couple of days until Thanksgiving, and you are trying to get ready to select and prepare the perfect meal for your family and guests. Turkey is the “big boy” on the table, but as much of an effort you can put into cooking it to perfection, not everybody will eat it, for a reason or another. Actually, you will most likely end up with plenty leftover: I know, been there – done that! And I’m sure you did too: “Turkey sandwich” for a week! 😉
That’s why I’m offering you this appetizing option to your traditional turkey. YES YES YES, there’s no meat involved, but I assure you the texture is so ‘meaty’, you won’t hear any complain from meat lovers! Besides being very tasty (and obviously a healthy option, hehe), it’s also light so you’ll still have room for all the other delicious food you will be serving!

This earthy soup reminds me of winters in Italy 🙂 Rich of flavor as well as fibers, vitamins and minerals. For this recipe I used beet greens, as I buy beets often and I like to use as much as I can of my food, discarding the least possible. You can definitely use the leafy greens of your choice: kale, spinach, collard, even cabbage. Enjoy! Continue reading “Nicole’s EARTHY WHITE BEANS & BEET GREENS SOUP”
One week till Thanksgiving! I had been planning on sharing few different recipes for your Holiday menu, but had two very hectic weeks and little time to blog! I will try to catch up and post some healthy & easy ones during the next few days. Mostly little twitches to your traditional dishes, to keep it classic, tasty, AND healthy 🙂
First on the list: Cranberry Orange Chutney. Let’s not give into the canned cranberry sauce! Not only it is loaded with sugar, but also preservatives. It’s so easy to make your own with a handful of ingredients and only takes few minutes. Continue reading “Nicole’s FRESH CRANBERRY ORANGE CHUTNEY”
The other day while doing my grocery shopping I found some incredible Organic Golden Beets, and had to get them! I roasted them and today decided to make a salad I love! It is a great combination of flavors, and (as usual 😉 hehe) packed with a lot of nutrients you need to keep healthy and happy.

Another quick an easy everyday recipe for you today 🙂
Asparagus are high in folate (folic acid), fibers, potassium, thiamin, vitamins B6, A and C, with no fat and no cholesterol. If you never had them with eggs you have been missing out! Seriously! Besides being a perfectly balanced nutritious meal, this dish is a great combination of flavors. I used to put a bit of Tabasco on my scrambled eggs back in the day, until I tried Sriracha. Oh boy! It’s delicious! Continue reading “Nicole’s ASPARAGUS & EGGS with SRIRACHA SAUCE”
