I love this quick salad! It’s a great option to stick to a healthy meal when you are on the go, or just don’t feel like cooking. It literally takes few minutes to put together and not only it tastes great, but it’s packed with vitamins and fibers too. Did you know there is now direct evidence between garbanzo beans and appetite? A recent study showed participants that included garbanzo beans in their diet reported more satisfaction, consumed fewer processed food snacks, and overall ate less, beating unwanted cravings. Today we finally got some fall weather our way. Don’t get me wrong, I love the SoCal ‘endless summer’ weather we are blessed with mostly year round. But I guess it makes these cooler, drizzling days more of a treat. So the first thing that came to my mind this morning was some hot, comforting Minestrone soup. It was always a winter staple as a kid growing up in Italy. I still remember my grandma behind the stove (and yes, if you are thinking about the stereotypical Italian grandma right now, you are spot on!), the smell filling up the kitchen on those rainy days. I love winter squash. All of them. And when this season comes around I’m in ‘squash-heaven’! Oh the possibilities! They are delicious in every way you prepare them: roasted as a side dish, mashed, in a risotto, as ravioli’s filling, fritters, cake, fresh pasta…and the list goes on. Squash are very low in saturated fat, cholesterol and sodium, a good source of Vitamin E, thiamin, niacin, Vitamin B6, folate, calcium and magnesium, and a very good source of Vitamin A, Vitamin C, potassium and manganese. Some of the health benefits include antioxidant support, anti-inflammatory and blood sugar regulation benefits, promotion of optimal health. So, when something is so yummy and so healthy, how can you not take advantage of it?!
This is the season! And who doesn’t love them?! Did you know they are considered one of the ‘world’s healthiest foods’? Cranberries provide us with an incredible array of phytonutrients, such as phenolic acids, proanthocyanidins, anthocyanins, flavonoids and triterpenoids.
