Nicole’s ASPARAGUS & EGGS with SRIRACHA SAUCE

Asparagus & Eggs with Sriracha Sauce

Another quick an easy everyday recipe for you today 🙂

Asparagus are high in folate (folic acid), fibers, potassium, thiamin, vitamins B6, A and C, with no fat and no cholesterol. If you never had them with eggs you have been missing out! Seriously! Besides being a perfectly balanced nutritious meal, this dish is a great combination of flavors. I used to put a bit of Tabasco on my scrambled eggs back in the day, until I tried Sriracha. Oh boy! It’s delicious! Continue reading “Nicole’s ASPARAGUS & EGGS with SRIRACHA SAUCE”

Nicole’s CHICKEN AVOCADO & JALAPENO BURGERS

Chicken Avocado & Jalapeno Burgers

Today I was thinking about posting the recipe of my ‘bomb’ Tacos, but instead decided to share this variation to the usual “Taco Tuesday”: Chicken Avocado & Jalapeño Burgers. Literally one of the best burgers I’ve had in my life! Quick and easy to prepare, super tasty and fresh with cilantro and a squeeze of lime. The whole serving size (3 of them), barely packs 400 calories of awesome proteins and good fat. Can’t get enough of them! ❤ ❤ ❤ Continue reading “Nicole’s CHICKEN AVOCADO & JALAPENO BURGERS”

Nicole’s ORGANIC ROASTED BEET PESTO

Organic Roasted Beet Pesto

Beets are another one of my favorite super-foods. They are a unique source of phytonutrients called betalains. Betanin and vulgaxanthin are the two best-studied betalains from beets, and both have been shown to provide antioxidant, anti-inflammatory, and detoxification support, on top of promoting optimal health. I eat beets in all kind of ways: love them in my morning smoothie! But this pesto is something else. So versatile it can be enjoyed with raw veggies, rice crackers, on a cheese plate, in a salad, or as a spread. Either way it is delicious! Continue reading “Nicole’s ORGANIC ROASTED BEET PESTO”

Nicole’s 5 MINUTES COCONUT FLOUR CHOCOLATE MUG CAKE

5 Minutes Coconut Flour Chocolate Mug Cake

When I talk about my love for chocolate, people smile and say “Who doesn’t love chocolate?!”. Exactly! I’ve been on my journey of clean eating for about 7 months now, so my ‘chocolate’ fix comes from raw cacao and cocoa powder goods. Cutting processed sugar made such an incredible impact on my well-being, I have no intention going back! Still, who said healthy eating has to be boring and tasteless? I treat myself with healthy & tasty dessert ALL the time. And you can trust my word on it! This quick mug cake is the perfect fix for an unexpected dinner guest or (if you are anything like me) a night in: pjs, couch, blanket and Netflix. Oh boy! Continue reading “Nicole’s 5 MINUTES COCONUT FLOUR CHOCOLATE MUG CAKE”

Nicole’s SWEET POTATOES GARLIC & TURMERIC SOUP

SWEET POTATOES GARLIC & TURMERIC SOUP

Oh my! I have been dealing with a nasty cold these past few days. I generally try to avoid using conventional medicine to ‘cure’ myself, as I rather strengthen my immune system through a diet packed with the right nutrients, vitamins and minerals. So, on top of a lot of juicing, leafy greens, and gallons (literally!) of hot ginger/lemon/raw honey teas I have been treating myself with this incredible soup. CRANBERRIES YAY!

Cranberry Cooking

This is the season! And who doesn’t love them?! Did you know they are considered one of the ‘world’s healthiest foods’? Cranberries provide us with an incredible array of phytonutrients, such as phenolic acids, proanthocyanidins, anthocyanins, flavonoids and triterpenoids. They also are a very good source of vitamin C, dietary fiber, and manganese, as well as a good source of vitamin E, vitamin K, copper, and pantothenic acid. Continue reading “CRANBERRIES YAY!”

Nicole’s EASY-PEASY SPAGHETTI SQUASH

Tonight I picked my Easy-Peasy Spaghetti Squash. As much as I’m ready for ‘Holiday recipes’, it has been so warm lately here in Southern California, I still just crave light and refreshing foods.
