Today we finally got some fall weather our way. Don’t get me wrong, I love the SoCal ‘endless summer’ weather we are blessed with mostly year round. But I guess it makes these cooler, drizzling days more of a treat. So the first thing that came to my mind this morning was some hot, comforting Minestrone soup. It was always a winter staple as a kid growing up in Italy. I still remember my grandma behind the stove (and yes, if you are thinking about the stereotypical Italian grandma right now, you are spot on!), the smell filling up the kitchen on those rainy days. Beets are another one of my favorite super-foods. They are a unique source of phytonutrients called betalains. Betanin and vulgaxanthin are the two best-studied betalains from beets, and both have been shown to provide antioxidant, anti-inflammatory, and detoxification support, on top of promoting optimal health. I eat beets in all kind of ways: love them in my morning smoothie! But this pesto is something else. This no bake chocolate-pomegranate tart is seriously too good to be true. Although my original recipe calls for a raw, gluten & grain free crust, I decided to post the ‘quicker and easier’ version of it. I love winter squash. All of them. And when this season comes around I’m in ‘squash-heaven’! Oh the possibilities! They are delicious in every way you prepare them: roasted as a side dish, mashed, in a risotto, as ravioli’s filling, fritters, cake, fresh pasta…and the list goes on. Squash are very low in saturated fat, cholesterol and sodium, a good source of Vitamin E, thiamin, niacin, Vitamin B6, folate, calcium and magnesium, and a very good source of Vitamin A, Vitamin C, potassium and manganese. Some of the health benefits include antioxidant support, anti-inflammatory and blood sugar regulation benefits, promotion of optimal health. So, when something is so yummy and so healthy, how can you not take advantage of it?!
Oh my! I have been dealing with a nasty cold these past few days. I generally try to avoid using conventional medicine to ‘cure’ myself, as I rather strengthen my immune system through a diet packed with the right nutrients, vitamins and minerals. So, on top of a lot of juicing, leafy greens, and gallons (literally!) of hot ginger/lemon/raw honey teas I have been treating myself with this incredible soup.
