Another delicious recipe with black rice. I can’t get enough of it! Very easy to put together, delicious and (obviously hehe) healthy. Enjoy it!

Nicole’s CAJUN SHRIMP BLACK RISOTTO

Gluten Free – Clean Eating – High Fiber – Dairy Free

(2 servings)

Ingredients:

12/15 Peeled Shrimp

1 1/4 cup of Black Rice

2 1/2 cups of Water

2 Green Onions

1 Garlic Clove

2in. Piece of Fresh Ginger

1 Tbsp Coconut Oil

Spices for the Cajun Seasoning:

1 Tsp Turmeric

1 Tsp Ginger

1 Tsp Cumin

1 Tsp Paprika

½ Tsp Cayenne Pepper

Salt & Pepper

Rinse and pat dry the shrimp. In a small bowl combine all the Cajun Seasoning spices and toss the shrimp making sure they are evenly coated. In a medium pot heat the coconut oil and add the chopped green onions, minced garlic and ginger. Saute’ for about a minute or two, then add the seasoned shrimp. Stir for another two/three minutes to coat the shrimp with the oil then add the water, a pinch of salt and bring to a boil. When the water is boiling add the rice, cover and let it simmer on a low flame for 40/45 minutes, stirring occasionally making sure it is not sticking to the bottom of the pan.

After 45 minutes your rice should be ready: the water absorbed and you should have a ‘moist’ consistency. Turn off the flame, cover and let sit for 5 more minutes.

Serving suggestion: If you like cheese you are welcome to sprinkle a little Parmesan. I top it off with some fresh cilantro and/or green onions to add freshness and color to the dish 🙂
