Beet Pesto Goat Cheese & Arugola Grilled Cheese

Right after posting the recipe for my ORGANIC ROASTED BEET PESTO I decided I HAD to share a good example on how to put it to use 😉

What better than a fancy, decadent Grilled Cheese sandwich? This is another example of how eating healthy is anything but boring! Enjoy it!

Nicole’s BEET PESTO GOAT CHEESE & ARUGULA GRILLED CHEESE

High Fiber – Clean Eating – Vegetarian Recipe

(2 servings)

Ingredients:

4 slices Ezekiel 4:9 Organic Sprouted Whole Grain Bread

3 oz Fresh Goat Cheese (possibly Organic)

4 oz ORGANIC ROASTED BEET PESTO

Fresh Arugula

2 Tbsp Organic Virgin Coconut Oil

1 sprig of Fresh Rosemary

Salt & Pepper

Prepare your sandwich spreading half of the goat cheese on one slice of bread, and half of the beet pesto on the other slice. Repeat for second sandwich. Brush both sides of the sandwiches with coconut oil (about 1 Tbsp per sandwich) and fresh rosemary. Place in preheated pan on low/medium heat, cover and cook for 2 to 3 minutes. Flip them to make both sides even, cover and cook for another 2 minutes. Once ready, open, add the arugula and sprinkle with fresh ground salt & pepper to taste.
